I remember I solved this sometime ago by my self but can't do it know, I'd like to change what system writtes in by default when no value is input or selected, I'm attaching screenshots so you can understand what I mean, pls help.

To change the default or initial text, you would modify the "Set initial value" field in the data cell properties.
From looking at your screenshot, I'll note that if you're looking to change the "Select producto" text, you would modify that text within the IFERROR() formula. For that given field, it's a good to have the IFERROR() formula, since the cost calculation may return an error if no product is selected yet.
